Meal Makeover: Green Eggs Lunchbox
This super simple, back to school lunch favorite created by Westmed registered dietitian In Jung Lifrieri is packed with protein, healthy fats and high in vitamin C. This will leave you feeling satiated and help to curb cravings for junk food or snacking later in the day.
Ingredients:

- 2 hard-boiled eggs
- Salt
- Pepper
- 1/2 avocado
- 2 tbsp Mayonnaise
- 1 red pepper
- 1 clementine
- Whole wheat plain Triscuit crackers

Directions:

- Boil 2 eggs to make hard boiled eggs
- Roughly chop eggs in a medium sized bowl
- Add 2 tablespoons of mayonnaise
- Add a pinch of salt and pepper
- Cut up avocado and stir it into egg salad (set aside)
- Cut up red pepper (set aside)
- Place “green eggs”, crackers, red peppers, and clementine all in separate compartments of bento box
