Kale and Sweet Potato Hash

A hearty, nutrition packed breakfast to help kick-start your healthy, happy and energetic morning!
Ingredients
1 small onion (diced)
2 medium sweet potatoes, cut in to cubes (option to buy pre-cut)
2 tbsp of olive oil
3 cups of shredded kale
2 large eggs
Salt and pepper
Instructions
- Pre-heat your oven to 425
- Heat a medium sized, oven safe, cast iron skillet
- Heat 1 tbsp olive oil in pan. Add cubed sweet potatoes and stir. Season with salt and pepper as desired. Cover the skillet after 3-4 minutes until the potatoes soften. Then leave uncovered so they brown. Cook 10 – 15 minutes. (Optional: To speed up cook time, microwave the potatoes for 1-2 minutes before hand)
- Add 1 tbsp olive oil, onion and kale once potatoes soften. Cook together until kale wilts
- Make space in pan for eggs
- Crack eggs and place in pan. Put the pan in the oven and bake until eggs are the way you like them! (ie. Over easy, over medium)
