Kale and Sweet Potato Hash

Kale and Sweet Potato Hash

A hearty, nutrition packed breakfast to help kick-start your healthy, happy and energetic morning!



1 small onion (diced)

2 medium sweet potatoes, cut in to cubes (option to buy pre-cut)

2 tbsp of olive oil

3 cups of shredded kale

2 large eggs

Salt and pepper



  1. Pre-heat your oven to 425
  2. Heat a medium sized, oven safe, cast iron skillet
  3. Heat 1 tbsp olive oil in pan. Add cubed sweet potatoes and stir. Season with salt and pepper as desired. Cover the skillet after 3-4 minutes until the potatoes soften. Then leave uncovered so they brown. Cook 10 – 15 minutes. (Optional: To speed up cook time, microwave the potatoes for 1-2 minutes before hand)
  4. Add 1 tbsp olive oil, onion and kale once potatoes soften. Cook together until kale wilts
  5. Make space in pan for eggs
  6. Crack eggs and place in pan. Put the pan in the oven and bake until eggs are the way you like them! (ie. Over easy, over medium)
