Garlic Ginger Sliders

This is a fun and health version of sliders that the whole family is sure to enjoy!
Ingredients
(serves 4)
Sliders
1 TBSP olive oil
1 lb ground turkey 94-99% lean (ground pork)
1 whole egg (or 2 egg whites)
2 TBSP low sodium soy sauce
2 tsp Dijon or spicy mustard
2 tsp dried minced onion
2 scallions sliced thinly (green only)
1 carrot finely grated
1-2 tsp freshly grated ginger (ginger can be stored in the freezer for easy grating and extended shelf life)
3 cloves garlic minced or grated
Sauce
1 ½ cups of low sodium chicken broth
¼ cup low sodium soy sauce
1 TBSP Dijon or spicy mustard
3 cloves garlic minced or grated
1-2 tsp freshly grated ginger
2 scallions sliced thinly
Iceberg lettuce or napa cabbage to wrap

- Add the olive oil to a 3” deep pan and heat on medium high
- In a bowl, combine the egg, soy sauce, mustard, minced onion, scallions, carrot, ginger and garlic
- Add the turkey to the mixture
- Form small patties and place them in the pan
- Cook for 5-7 minutes, turn the patties and brown the other side
- In the meantime, whisk together the soy sauce and mustard
- Deglaze the pan with the chicken broth
- Add the soy sauce mixture, the garlic, ginger and scallions to the pan
- Cover and simmer for 20 minutes
- Wrap the patties in the lettuce or cabbage
